Recognize it and stop taking it apart
A round mechanical thermostat, and some rectangular ones, may contain a small glass ampoule of mercury. Digital thermostats usually do not. If you are unsure, treat the old unit as if it contains mercury until a program tells you otherwise. Do not pry the ampoule out to look. Do not vacuum a broken one. If it breaks, air the room, keep people and pets away, and follow your health or environmental agency's mercury-spill guidance. For an intact unit, leave the cover on or place the whole thermostat in a zipper bag and then in a small rigid container.
Use a thermostat take-back or HHW
Thermostat recycling programs and household hazardous waste events commonly accept these devices from residents. A scrap drawer is the wrong destination, because the mercury is the point. Call and ask whether they want the wall plate, the cover, and the wiring left on. Usually the whole intact thermostat is fine. Do not bring a bucket of loose mercury switches you already broke out of several devices. If you already did that, tell the HHW staff before you arrive so they can say whether a sealed container is accepted.
Do not toss it in the e-waste bin silently
Electronics sheds and scrap yards may not want mercury devices in the general bin. Declare the thermostat. If the attendant says it belongs at an HHW event instead, take it home. It is small. Store it where it will not be crushed in a junk drawer under heavier tools. When you install the new thermostat, the wires in the wall are part of the house, not part of the waste. Cap them safely if you are not installing a replacement immediately, and follow ordinary electrical safety.

Ask the program. A metal plate without the mechanism is ordinary hardware. The mechanism is the part that matters.
